Orange Spice Sweet Potato Soup Recipe

If you wanted to save time, you could use canned yams, but I think it tastes delicious … as if you used the frescoes. This recipe will make 4 servings.

Orange Spice Sweet Potato Soup

Ingredients:

2 tablespoons vegetable oil

2 lbs. sweet potatoes (yams), diced

1 large carrot, cut small

1 onion, finely chopped

1 clove garlic, finely chopped

2 1 / 2 cups vegetable broth

1 1 / 2 cups unsweetened orange juice (not concentrate)

1 cup plain yogurt

1 tablespoon chopped cilantro

salt and black pepper to taste

1 teaspoon cinnamon

Peel and chop sweet potatoes into 1 to 2 "pieces. Heat oil in large saucepan or pot. Add the diced yams, carrots, onions and garlic, cook over medium heat, stirring constantly to prevent sticking.

Pour the vegetable broth and orange juice, cover and bring to full boil. Reduce the heat to low and cook the soup for 20 to 25 minutes, stirring occasionally to prevent sticking and scorching. Remove the cap and see if the yams and carrots are fork tender. If so, pour the mixture into a blender and process for 1 1 / 2 minutes, until the puree and soft. Return soup to pot.

Add the yogurt, cilantro and season to taste with salt, black pepper and cinnamon. Let the soup for 1 minute before serving.
