Looking for a quick recipe to jazz up New Year’s Eve this year? Nothing will ring in the new decade, in addition to your salad with champagne vinaigrette sparkling vegetarian. Pour on some fresh vegetables mixed with toasted almonds and fresh strawberries and you’ll be in a celebratory mood soon.
New Years Eve Vinaigrette
Ingredients:
1 cup light olive oil
1 / 4 cup champagne vinegar
Champagne 1 / 2 cup
Sugar 1 / 8 teaspoon
Salt and freshly ground pepper (to taste)
A pinch of sugar, optional
Instructions:
In a medium bowl, mix the olive oil, champagne vinegar and champagne. (You can use a blender for this if you wish.) Add sugar and season to taste with salt and pepper. Whisk until dissolved. Serve immediately over the greens.
Yield: 2 cups
