Prune Cake Old Fashion
1 box yellow cake mix
3 eggs
1 / 2 cup cooking oil
1 / 2 cup water
1 teaspoon cinnamon
1 / 4 teaspoon nutmeg
1 cup chopped, pitted, uncooked prunes
1 cup chopped nuts
Their favorite lemon filling
Whipped cream
Cover prunes with boiling water and let stand for 2 hours.
Preheat oven to 350 degrees. Grease and flour a jellyroll pan, set aside.
In a medium bowl, combine cake mix, cinnamon and nutmeg. Add eggs, oil and water mix. Drain the prunes and add to mixture. Pour the mixture into the prepared pan and sprinkle walnuts over the dough. Bake about 35 minutes, or until a wooden toothpick inserted in center comes out clean, 350 degrees. Then, cool the cake completely cut in half crosswise. Place one piece on a plate. Cover the top with your favorite lemon filling. Pipe whipped cream around the top edge of cake with a small circle of whipped cream in the center. Garnish with walnut halves if desired. Also tube of cream around the bottom edge of the cake, if desired.
Shortcut STRAWBERRY CAKE
This recipe is from a lady who had a country store with her husband when she was a child.
1 cup miniature marshmallows
2 cups frozen strawberries
3 oz package strawberry gelatin
2 1 / 4 cups all-purpose flour
1 / 2 cup sugar
1 / 2 cup shortening
3 teaspoons baking powder
1 / 2 teaspoon salt
1 cup milk
1 teaspoon vanilla
3 eggs
Preheat oven to 350 degrees.
A grease 9 x 13 inch baking pan. Sprinkle marshmallows on the bottom of the baking pan. Combine strawberries and gelatin dry, set aside. Combine flour and remaining ingredients, beat at low speed of an electric mixer until moistened. Pour the marshmallow mixture into the pan. Spoon strawberry mixture into the dough. Bake at 350 degrees for 45 to 50 minutes. Serve topped with whipped cream.
