Kefir and yogurt Cucumber Gazpacho

Want a cool summer lunch that is healthy, easy and quick to make? Gazpacho is a cold cucumber soup perfect for hot summer days and is quick and easy. You can feel good about what you eat and boost your immune system at the same time! Let’s make a batch of cucumber gazpacho with all the health benefits of kefir and yogurt.

This cold soup is refreshing and moisturizing. Cucumbers rehydrate the body and kefir, adds energy to the B vitamins to revitalize the afternoon. Kefir and yogurt are full of good bacteria, they just have different strains, so that they complement each other. If you have not tried Gazpacho, however, you are in treatment. This is the fun way to get your probiotics in your day.

What you need:

4 cucumbers
1 cup yogurt, plain full-fat
1 clove garlic, minced
1 tablespoon fresh dill
Juice of 1 lemon (about 2 tablespoons)
Sea salt, pepper
1 cup kefir
Tomato juice or V-8 juice (optional)

Peel the cucumbers. Cut lengthwise and scoop the seeds and discard. Cut the cucumber into small pieces and put in blender. Blend until smooth.

Add the yogurt, garlic, dill and lemon juice and mix until smooth.

Now add salt and pepper to taste. Add the kefir until creamy. If desired, swirl in the tomato juice or V-8 juice to taste, or if others do not like tomatoes in gazpacho, then just add that in individual cups. Cool the soup in the refrigerator for several hours.

This is good for the remains for a few days. So if you do not have time to make lunch, make this the day before and he’ll be ready waiting for you. It will keep fresh, hydrated and alert the rest of the day!
