As a busy mom and wife, I’m always looking for easy and time saving recipes for chicken, and it suits all ’Mom’ requirements.
What I like about this recipe that is made with everyday ingredients that are likely to have on hand. To save time, I do step 1 the day before and then refrigerate in a container. The next day, I’ll step 1 ingredients heated in the microwave for 1-2 minutes and then proceed to step 2. I do this so I’m not spending an hour in my kitchen, heavy work or school night.
Mozzarella Chicken Recipe
Ingredients Step 1:
2 1 / 2 lbs. of boneless, skinless chicken breasts
2 eggs, well beaten
1 / 2 cup seasoned breadcrumbs
1 / 4 cup butter or margarine
1 can (8 ounces) tomato sauce or spaghetti sauce
3 / 4 teaspoon dried basil
The chicken breasts cut in half and remove the skin. In a small bowl, whisk eggs. Dip the meat into the eggs and then bathe with dry breadcrumbs. Heat the butter in a Big 12 "round pan until melted. Ingredients Step 2:
1 tablespoon cheese / 2 cup mozzarella, grated

In a small bowl, combine the mozzarella cheese with the paprika until blended.
Arrange chicken pieces in a non-greased 9 "square baking dish, along with the rest of the ingredients in step 1. Sprinkle the cheese mixture. Preheat oven to 375 degrees and bake for 15 to 20 minutes or until cheese is melted and bubbly around the edges.
