Christmas Recipe Pork Tenderloin for dinner

This christmas recipe pork tenderloin roast is an ideal dish for a holiday dinner or meeting. Serve with fresh green beans with sea salt, pumpkin and golden butter smashed potatoes and fresh salad, gelatin whip. To add a tasty snack, try a vegetarian pot stickers, tart goat cheese or zucchini and ham roll-ups.

You can even make this recipe one day ahead. Just cook everything thoroughly, but not to cut the pork tenderloin. Refrigerate the sauce and roast pork loin separately. Then, just before serving heat the sauce in the microwave and pork tenderloin in the oven at 325 for about 10 minutes until hot. Let the rest of roast pork 10 minutes before cutting, then serve.

Roast pork tenderloin with apricot and caramelized onion sauce

* 2 pork fillets (about 1-1/2 to 2 pounds total)

* 2-1/2 tablespoons of olive oil

* Kosher salt and pepper

* 2 medium onions

* 2 tablespoons apricot jam

* Grated zest of 1 orange

Preheat oven to 450 degrees Fahrenhait. In a heavy skillet to the oven, heat 1 tbsp. olive oil over medium-high heat. The pork fillets salt and pepper. Brown pork loins in the pan on all sides, about five minutes. Transfer skillet to oven and roast for 15 to 20 minutes until the internal temperature of pork loins comes to 145 to 150 degrees. Remove from oven and let pork tenderloin to rest for 10 minutes. This will cause the temperature of the pork up to 155 to 160 degrees.

Meanwhile, heat the remaining 1-1/2 tablespoons olive oil in medium skillet over medium-high heat. Cook the onions 1 to 2 minutes, and then reduce heat to medium-low. Allow onions to cook 15 to 20 minutes, stirring occasionally to make sure they do not burn. Add the gelatin, apricot and orange zest to the caramelized onions. Cook 3 to 5 minutes until the gelatin melts. Cut the pork diagonally and serve with apricot sauce onion.
